Trying new Recipes...

I have been trying a lot of new recipes lately that I find on Pintrest and thought I would share and review my opinion on a few of them that I have recently made....

Starting with, low carb bread. So one thing on a low carb diet, bread is pretty much out the door. I don't really miss it as there are a lot of substitutes that work great for bread, but every now and then I want an ooie gooie grilled cheese sandwich. Not having bread makes this a bit difficult. So I looked up a recipe for a low carb bread and decided to give it a try.
As you can see, my bread turned out pretty nice. Had a nice brown crust to it, my toothpick came out nice and clean, sure looks like bread!
I dumped it out of the loaf pan and onto a plate so I could cut it and store it easier. It came out okay... I probably should have greased the pan a bit better, it did leave some of the bread behind on the bottom, but that's ok, I still have a good looking loaf of bread that I can eat!

I get everything ready, my butter, and cheese and cut a couple of slices of this warm bread. It cut really nice, has a bread consistency, it has to be good! I proceed to butter 2 small slices and put one in the pan and topped it off with a piece of cheese. (I stuck a piece of bacon in it too...shhh!) I put the second piece on top and grilled me a sandwich! 
As you can see, the bread held up nicely in the pan, it grilled nicely, it smelled great! 
As you can see, the size of the sandwich is about the equivalent to a half of a sandwich with store bought bread. Perfect for me since I can't eat much anyway! 

Now the moment of truth... I took a bite of this sandwich I had been craving for months! The bread held together good, had the consistency of bread but...... tasted like eggs. So eggie! It was like I was eating a breakfast sandwich, eggs, cheese and bacon, which wasn't too bad if I wanted a breakfast sandwich. I wouldn't say the bread was a fail, it will work for some things. I wouldn't use it to make like a peanut butter sandwich or anything. I am thinking of making some french toast out of it tomorrow morning and see how it works with that. 

On a scale of 1-10 I'd give this a 6. Its eatable, works with some things, but hard to get over how eggie it taste.

**EDIT** This bread is so much better the next day! After having it in the fridge overnight, it has lost that eggie taste and I was actually able to use it for half a hamburger and it was great! Changing my rating from a 6 to a 9!

Next up on the new things to try list....
2 Ingredient Low Carb Chips

This looked easy enough, 2 ingredients for some crunch cheesy chips. I love me some chips and I don't get them very often because.... simply they are not good for me! I was excited to try out this recipe to give myself something to crunch on. 
Basically, its just egg whites and cheese of your choice. Mix the egg whites, put in a small muffin tin, sprinkle with cheese and some seasoning of choice, bake and wala! You got chips. 

Texture wise, they do have a nice crunch! Flavor wise, to me, they tasted almost like pork rinds, and I very much dislike pork rinds. I wasn't a big fan of these. Most of these little guys found their way to the garbage can. Now for someone that likes that flavor, then these are great! Just wasn't my thing.

On a scale of 1 -10, I give them a 6. They do pack a crunch, probably would have been good with some dip of some sort, but by themselves, I'll pass.

My Family LOVES Potato Soup. But, I do not make it for them very often. Potatoes are just not a good vegetable for a low carb/high protein diet. However, potato soup is a wonderful comfort food. The other day it was raining here and I wanted to make something like a potato soup, but without the potatoes. So, I found a recipe for a cauliflower chowder. I figured why not, we use cauliflower as a substitute for a LOT of bread, rice, potato recipes.
The chowder had cauliflower, onions, carrots, and bacon. It looked delicious. I took a little sample taste while it was still cooking in the pot and was pleasantly surprised by the creaminess. It was delicious! I did add a bit more salt and pepper to it, but other than that, I thought it was great. My family was not all that into it, although they tried it simply because it had bacon in it. They said it was okay, not a favorite and they prefer my potato soup. 

On a scale of 1-10, I give this one an 8. Its defiantly a comfort food I could turn to on a cold winter day.

OMG PIZZA!!

Since I started my weight loss journey, I have been eating low carb high protein diet. I avoid bread like it was the plague, but I must admit, I sure do miss some things! And one of those things is Pizza! I can't really stomach eating the crust (or anything bread related), it just sits too heavy in my stomach and is very uncomfortable, sometimes painfully so. My 44th birthday!

Today is my birthday! I can't hardly believe it, I am 44 years old today and feel half that age! My celebration started last weekend, Saturday we had a gathering of friends and family. My parents, my brother and his family, my best friend and her husband and another friend from the club I'm a member of came over, in addition to the 7 in my family alone. We sat around my new fire pit area complete with benches that my husband built for me for my birthday! Had a few drinks, some appetizers and had a good time. This year for my birthday, my oldest son took me out to lunch and then bought me a new hummingbird feeder that I wanted. And the hummingbirds enjoy it too :) Then my oldest daughter took me to Kohls to buy some new shoes that I needed to have for working purposes. Following that, she took me to Bed Bath and Beyond where I got some nice smelly good stuff, and then we went to Starbucks where she treated me to a pumpkin spice coffee that was delicious! My you
